Let's Go Sweet Potato
Share
We make a big deal about the fiber content of Junebars. But where does all that fiber come from?
Meet the sweet potato – one of Junebar’s four hero ingredients.
Sweet potatoes are starchy root vegetables from South America. They’re rich in fiber, beta-carotene, vitamins C and E, and potassium.
Sweet Potatoes Are Also Sweet
Crazy, right?
We don’t add sugar to Junebars, so a lot of our sweetness comes from the sweet potatoes. Because the sugar is unrefined, it comes packaged with the fiber, slowing absorption and reducing the glycemic load.
Eating foods with a low or medium-low glycemic load helps avoid blood sugar spikes, and avoiding high glycemic load foods reduces the risk of diabetes.
They may even help fight some forms of cancer. Sweet potatoes are rich in anthocyanins, basically antioxidants, which show cancer-fighting properties in lab tests.
Sweet Potato Fun Facts
- Preserved sweet potatoes were found in a cave in Peru, suggesting people have been eating them for at least 5,000 years.
- The word “yam” is used interchangeably with “sweet potato” in the US, but they’re actually different vegetables. A yam is an orange tuber from Africa, not the same thing as a South American Sweet Potato.
- Sweet potatoes are technically not even potatoes! They’re “tuberous roots” instead.
Sweet potatoes are delicious and better-for-you just like Junebars!
